Bolivia 90%

This is a chocolate which verges on cocoa. It is nearly impossible to obtain the cocoa of the Bolivian cooperative El Ceibo on the market. In this 90-percent chocolate you may taste the full aroma of this cocoa rarity.

A single origin chocolate with 90% cocoa and 10% raw cane sugar for all those who like clear lines and don’t do compromises. It’s created with El Ceibo cocoa – a rare bean only available in very small batches. We travelled to Bolivia, met up with the cocoa farmers and were given this unique cocoa. A rare cocoa privilege!

Fragrance notes: subtle notes of wood and fruit (hints of grape)
Taste notes: nuts, (caramelised) wood, lots of cream, a hint of liquorice, mild touch of coffee, lingonberries, woody finish, mildly astringent with a little bit of fructose

Peru "Criollo Cuvée" 82%

This is an amazing chocolate made of Criollo beans which count to the world most aromatic cocoa beans. We purchase this cocoa from the Peruvian farmers from Aprocap where they also add white "Porcelana" Criollo beans resulting in a top-class chocolate with a cocoa content of 80%.

Criollo is the best cocoa bean in the world, but unfortunately it has become exceedingly rare. In Peru, a vintage cocoa variety has been preserved, and its fruit contains 30% of the legendary white Criollo beans. This bar is a fine cocoa blend mixed by Mother Nature herself, conserving a veritable jewel of a cocoa source. Enjoy this top of the range single origin chocolate with a surprisingly mild flavor despite a whopping 82% cocoa content.

Fragrance notes: biscuits, notes of berry
Taste notes: very mild, nutty, nougat, sweet cream, biscuit (lightly spiced), raisins, grapes, lemons, hint of olive. Nutty and fruity finish with a touch of grapefruit

This is the best of the best, a special selection directly from the source, which we have turned into a floral single origin chocolate with a 75% cocoa content.

Taste notes: very mild, nutty nougat, caramel, café latte, echoes of fermented fruit, finish of coffee with lots of dark Gianduja with a lingering aftertaste.

A single origin chocolate with a fruity note, made with fine flavor cocoa from Para, where Julia Zotter spent an entire summer with a family of cocoa farmers, working with them and learning much of what there is to learn about cocoa cultivation. She toiled from morning to night in the middle of the rain forest, in order to learn the perfect fermentation method, which allows the cocoa’s full aroma to blossom.

The inventor Josef Zotter has constantly invested in his products. Josef Zotter has succeeded in transforming the world of chocolates. With the hand-scooped chocolates the creative chocolate maker from Riegersburg has managed to upset our familiar view of the world of chocolate. Bacon Bits in chocolate, Pumpkin Seeds with Marzipan and Apples and Carrots with Ginger surrounded by chocolate. The chocolate revolution started: novel flavour combinations, a new format, art as packaging and the transformation of delicacies into green food. In 2012 the hand-scooped chocolates were celebrating their 20th anniversary. More than 20 years of chocolate history filled with a tremendous amount of creations, crazy ideas and the rebellion against the mainstream.


Bean-to-bar – from the bean to the chocolate Since the opening of the Chocolate Factory Josef Zotter has ranked among the few quality chocolate makers around the world whose chocolate production processes are located under the same roof: From the roasting of the cocoa beans via the rolling up to the finishing touches in the conching plant everything is carried out with a high degree of sensitivity. In this way Zotter clearly positions himself against standardized mass production and the concentration of the chocolate market. In his Chocolate Factory there is no run-of-the-mill processing. The entire manufacturing process becomes transparent and tangible for visitors in the Chocolate Theatre. Zotter even was invited to the renowned Harvard University and his company is the only Austrian company included as part of the students’ curriculum as a case study.
