Bolivia 90% 

A single origin chocolate with 90% cocoa and 10% cane sugar for all those who like clear lines and don’t do compromises. It’s created with cocoa from the cooperative El Ceibo – which is only available in very small batches. We travelled to Bolivia, met up with the cocoa farmers and were given this unique cocoa. A rare cocoa privilege!

This chocolate, with its subtle fragrance combination of wood and grapes, might at first appear reserved, but that’s just the initial impression. On the palate, you will notice a perfect combination of mild and full-bodied flavors right from the start. First, nutty and woody notes develop, accompanied by mild echoes of caramel and a lingering note of cream, enveloped by hints of liquorice and coffee ahead of the fruity lingonberry finish. This chocolate’s rich and only mildly bitter character with notes of wood and a light fructose stays on the palate for a while.

Peru Criollo Blend 82% 

Criollo is one of the best cocoa beans in the world, but unfortunately it has become exceedingly rare. In Peru, a vintage cocoa variety has been preserved, and its fruit contains 30% of the legendary white Criollo beans. This bar is a fine cocoa blend mixed by Mother Nature herself, conserving a veritable jewel of a cocoa source. Enjoy this top of the range single origin chocolate with a surprisingly mild flavor despite a whopping 82% cocoa content.

This jewel of a cocoa variety stands out like an elegant princess with its tender and harmonious bouquet. Your senses of smell and taste will be in a state of rapture. This cocoa is roasted gently for a reason – otherwise you wouldn’t be able to enjoy this chocolate’s unique qualities. Its sublime biscuit fragrance accompanied by mild notes of berry will prepare your palate for a multi-layered aroma adventure. Initially, slightly nutty notes will develop, subsequently replaced by nougat, sweet cream and a lightly spiced cake biscuit. The finish presents with a basic note of raisin, enveloped by hints of grape, lemon and olive. Nutty nuances and a slightly tingling touch of grapefruit will linger on your palate for a while after.

The Guatemala chocolate’s seductive and fruity fragrance is the result of our newly developed fine mist roasting method. At first smell, you will experience a very complex fruit extravaganza – with berries, cherries, banana and peach at the forefront. Its aroma range presents even more effectively on the palate with a taste almost akin to a spicy, fruity bubble gum. It starts with a suggestion of lightly salted lye roll and develops into a sweet spice mix which is immediately ambushed by a multi-layered fruitiness. You’ll taste a delicious berry aroma first, which then turns into a finish of intense notes of cherry, peach and watermelon. Its lingering fruity aroma accompanied by a spicy flavor presents with a mildly peppery finish.

Uganda 70%

This dark, single origin chocolate was created with cocoa from Uganda’s Mountains of the Moon. 1000 small farmers cultivate our fairly traded organic cocoa on the slopes of this mythical mountain range. They grow hand-selected, large cocoa beans they call “Selection Noir de Noir” – mild and full of flavor: a cocoa with lots of class!

French White Nougat

Savoir vivre, the Lucullan way. French white nougat hailing from Montélimar is a veritable delicacy and extremely difficult to create. We dared to try, produced an otherworldly delicious and sweet white cloud and dunked some chopped pistachios and hazelnuts in it. We added a layer of homemade almond praline and covered the bar in an elegant milk chocolate coat with a confident 60% cocoa content.

Zotter produces individual chocolate for individual people who savour each moment. The inventor Josef Zotter has constantly invested in his products. He has been involved in fair trade since 2004, in 2005 his company converted to organic and in 2006 he opened his own Chocolate Factory. Josef Zotter has succeeded in transforming the world of chocolates. With the hand-scooped chocolates the creative chocolate maker from Riegersburg has managed to upset our familiar view of the world of chocolate. Bacon Bits in chocolate, Pumpkin Seeds with Marzipan and Apples and Carrots with Ginger surrounded by chocolate. The chocolate revolution started: novel flavour combinations, a new format, art as packaging and the transformation of delicacies into green food. In 2012 the hand-scooped chocolates were celebrating their 20th anniversary. More than 20 years of chocolate history filled with a tremendous amount of creations, crazy ideas and the rebellion against the mainstream.


Bean-to-bar – from the bean to the chocolate Since the opening of the Chocolate Factory Josef Zotter has ranked among the few quality chocolate makers around the world whose chocolate production processes are located under the same roof: From the roasting of the cocoa beans via the rolling up to the finishing touches in the conching plant everything is carried out with a high degree of sensitivity. In this way Zotter clearly positions himself against standardized mass production and the concentration of the chocolate market. In his Chocolate Factory there is no run-of-the-mill processing. The entire manufacturing process becomes transparent and tangible for visitors in the Chocolate Theatre. Zotter even was invited to the renowned Harvard University and his company is the only Austrian company included as part of the students’ curriculum as a case study.
