A high percentage single origin chocolate made with organic cocoa from the young “Cacao Tocache” cooperative, located amid the infamous drug growing region of San Martin. Organic cocoa instead of coca – in order for the transition to be quick and smooth, farmers started cultivating the fast-growing CCN 61 cocoa bean, which is popular but does not count among the fine, high-quality cocoa bean varieties, so we helped the farmers start a radical quality campaign. Through a drastic reduction in quantity, we managed to create an interesting cocoa bean with plenty of character - a maneuver straight from a wine grower's bag of tricks. We're happy because the “Cacao Tocache” farmers are super-motivated and the farmers are happy because for the first time, they are able to export their cocoa to Europe – and directly to Zotter. Voilà!
