Conching time: 20 hrs.

A world tour: Experience a top cuvée made up of rare cacao varieties from five countries: Tanzania, Ghana, Togo, Guatemala, and the Dominican Republic. The focus of this particular cuvée is African cacao and the individual cacao-growing regions we’ve just visited. We incorporate a Trinitario fine-flavor cacao from Tanzania, an excellent cacao created from Amelonado, and Criollo beans with a fruity aroma. There’s another Amelonado cacao from Ghana that emits its sublime fragrance during the roasting process. Togo is represented with the country’s first organic and fair trade cacao, and a further rare cacao variety with a high Criollo content hails from Guatemala. The indigenous cacao farmers there are protecting the legacy of the legendary Maya by cultivating this rare regional fine flavor cacao. And last but not least, our Zorzal cacao from the Dominican Republic. Zorzal’s focus is environmental protection, and they founded the country’s first private wild bird sanctuary. Each cacao variety is roasted individually and then mixed with the others to produce a cacao cuvée, introducing a paradise of different cacao aromas to you. Taste profile: Tanzania: chocolatey and creamy cacao character with notes of citrus Ghana: intense chocolatey flavor with notes of cherries, grapefruit, and licorice Togo: sweet notes of marzipan, licorice, and cherry jam Guatemala: notes of lightly salted lye roll, spice mix, berries, mix of fruit and watermelon Dominican Republic: mild, chocolatey with notes of walnut.
