This year’s vintage cuvée brings together five high-altitude cacao varieties, led by the renowned Chuncho heirloom cacao and complemented by distinctive beans from Colombia, Ecuador, Guatemala, and Uganda. The resulting flavor profile is remarkably smooth and balanced, with bright notes of red berries, roasted pecans, and layers of cacao and delicate florals. The experience begins with a creamy, almond-like chocolate taste, unfolding into a mild marzipan and spice character. Subtle hints of fresh grass and herbs appear, underscored by gentle ginger, which enhances the chocolate’s roasted depth and complexity. Each bite finishes with lush Morello cherries, enlivened by tangy kombucha and yogurt notes, and ends on a mellow malty roast with a lingering chocolatey aftertaste and very little bitterness.
A summit of mountain-grown cacao: Most cacao is cultivated in the lowlands, but this exceptional cuvée features beans selected from the highland regions of Ecuador, Colombia, Guatemala, Peru, and Uganda. The result is a bold, exquisitely dark chocolate with 77% cacao, shaped by five origins, unique altitudes, and an alluringly fruity, berry-forward aroma.
