In Peru, a vintage cocoa variety has been preserved, and its fruit contains 30% of the legendary white Criollo beans. This bar is a fine cocoa blend mixed by Mother Nature herself, conserving a veritable jewel of a cocoa source. Enjoy this top of the range single origin chocolate with a surprisingly mild flavor despite a whopping 82% cocoa content.
This jewel of a cocoa variety stands out like an elegant princess with its tender and harmonious bouquet. Your senses of smell and taste will be in a state of rapture. This cocoa is roasted gently for a reason – otherwise you wouldn’t be able to enjoy this chocolate’s unique qualities. Its sublime biscuit fragrance accompanied by mild notes of berry will prepare your palate for a multi-layered aroma adventure. Initially, slightly nutty notes will develop, subsequently replaced by nougat, sweet cream and a lightly spiced cake biscuit. The finish presents with a basic note of raisin, enveloped by hints of grape, lemon and olive. Nutty nuances and a slightly tingling touch of grapefruit will linger on your palate for a while after.

Bean-to-bar – from the bean to the chocolate Since the opening of the Chocolate Factory Josef Zotter has ranked among the few quality chocolate makers around the world whose chocolate production processes are located under the same roof: From the roasting of the cocoa beans via the rolling up to the finishing touches in the conching plant everything is carried out with a high degree of sensitivity. In this way Zotter clearly positions himself against standardized mass production and the concentration of the chocolate market. In his Chocolate Factory there is no run-of-the-mill processing. The entire manufacturing process becomes transparent and tangible for visitors in the Chocolate Theatre. Zotter even was invited to the renowned Harvard University and his company is the only Austrian company included as part of the students’ curriculum as a case study.
