Colombia is an amazing cacao-producing country, and we’re proud to present a fascinating, very special cacao, which we’ve used to create a delicious, dark single origin chocolate with an 80% cacao content, sweetened with 10% raw cane sugar and 10% muscovado sugar.
This cacao is cultivated by the small Cooagronevada Cooperative located on the slopes of the majestic Sierra Nevada de Santa Marta mountains in northern Colombia. Further up the mountains, coffee is grown, and in the lower regions, cacao is cultivated. Old, domestic cacao trees have been rehabilitated and now again carry Trinitario and Criollo beans, the finest and most precious cacao beans in the world. The cacao undergoes a centralized fermentation and is hand-selected
The cooperative is led by women. Having their own income is an important step towards female independence. Cooagronevada is the embodiment of equality between men and women.
Created, bean-to-bar at our chocolate factory using a special fine mist roasting method (FMR). During the roasting process, we inject water, producing a fine mist, which in turn lowers the temperature. This makes the roast softer, bringing out all of the cacao aroma even more – cacao in its full character, with a ton of charisma and female power.
Cacao isn’t called “the food of the gods” for nothing. The fruit of the cacao plant is on average about 8 inches in length and comes in various colors: green, yellow, purple, orange, red and crimson. Cacao loves variety! About 25-50 cacao beans are contained within each fruit, and that’s the magical stuff chocolate is made of.
