The high cocoa content in this chocolate really brings out the complex and uncompromising bouquet of its Peruvian fine flavor cocoa. Only a very mild bitterness is noticeable. The chocolate’s initial aroma of nuts and wood is later joined, if given enough time to develop, by slightly earthy and spicy notes with a red fruit finish.
